Mushroom Pasta
Mushroom and Bacon Sauce
30 g butter
1 onion, peeled and chopped
1 garlic clove, peeled and crushed
4 rashes of bacon, rind removed and
chopped
185g button mushrooms, sliced
2 tablespoons of flour
1 cup milk
1/4 cup of cream
1 tablespoon chopped fresh parsley
Fresh ground black pepper
Fettuccini or spaghetti (500g)
Melt butter over medium heat. Add onion
and garlic cook gently stirring until onion is golden
Stir in bacon and cook until bacon is
crisp (c 5 minutes)
Add mushrooms and cook, stirring until mushrooms are tender
Blend in flour and cook for 1 minute
Remove from heat and gradually stir in
milk and cream. Return to pan to heat and cook, stirring constantly until sauce
boils and thickens.
Stir in parsley and black pepper to
taste and serve with fettuccini.
